The first and most basic is the suction vacuum sealer.  The suction vacuum sealer has basic technology that sucks air out of the bag your food is placed in, then seals the end of the bag to keep that air out. The average user would be quite satisfied with this operation.

Suction vacuum sealers also commonly have accessory ports or hoses that allow you to seal things other than the classic bag.  With the accessories, you can seal jars, canisters, zipper bags, or other containers.  With some models, you can even quickly marinate foods! The downside of the suction sealer, of course, is that the technology does not allow for liquids to be sealed.

If you are going to be doing a lot of sous vide cooking, and need to seal in liquids, it is better to buy a chamber vacuum sealer that has this ability.  Before considering a chamber sealer, please be aware that this technology does not work very well with accessories.  However, with some models, you can insert up to pint sized jars to vacuum seal.

The last type of food sealer we will go over is the commercial style food sealer.  This model is designed for big operations, and can vacuum and seal mass amounts quickly.  They are normally larger and more expensive in exchange, but they are geared towards commercial users.

  • Suction Vacuum Sealer

    The suction vacuum sealer sucks air directly from the bag, then seals it with a heated seal.  Suction vacuum sealers are usually the most inexpensive and versatile.  Because there isn’t a lot of extra technology in these, a lot of effort usually goes into design and features.  These are the most commonly found sealers, and the ones most geared towards the average user or even the beginner food sealer.Suction vacuum sealers are great for basics, though they are not always recommended for sealing in liquid.

    When attempting to seal liquids with a vacuum suction sealer, it is normally recommended that you freeze the food beforehand, so essentially you turn it into a solid that is more easily sealed.  If attempting to seal in liquids on a model that it is not recommended to do so, you risk not having a proper seal because the moisture gets sucked into the seal area and prevents the seal from working.  you can also accidentally suck air liquid into the motor itself, which will obviously ruin the machine.  If you plan to seal liquids a lot, and do not wish to pre- freeze, you should probably consider the next model of food sealer we will be discussing; the chamber vacuum sealer.

  • Chamber Vacuum Sealer

    The chamber vacuum sealer has a special technology that is designed especially for storing liquids.  this type of sealer is geared towards more advanced users, and especially those who wish to perform sous vide cooking with their sealed items.  The way a chamber sealer works is by placing your food, liquids included, into a pouch, then placing it into a chamber for sealing.  The air is sucked out of the entire chamber, and not just the bag, and it keeps liquid in the bag instead of coming out.

    Chamber vacuum sealers work well in sous vide cooking, because they do not require you to freeze foods with liquids before sealing.  when cooking sous vide, the main focus is not exposing the food to extreme heat,that can detract from the flavor and texture of the food.  What better way to add to this idea by not exposing your foods to extreme cold either?  We all know that food is best fresh and never frozen, but before chamber sealing technology, all liquids had to be frozen before sealing.  It’s good to know that food technology is constantly making improvements in keeping food fresh and delicious.

  • Commercial Vacuum Sealer

    Commercial vacuum sealers can be either suction or chamber sealers.  The main thing that defines a commercial sealer is that it is designed to seal quickly and efficiently, making it easier to seal in mass amounts of food at time.  This is achieved by design of commercial sealers in a few ways.  first, commercial vacuum sealers normally have a more powerful motor.

    Though this usually makes them a bit bigger in size, this also makes them vacuum out air much quicker than the basic consumer models, allowing for bigger operations to be completed quickly. Another improvement to speed in the commercial sealers can be found in the ‘wait time’ between seals.  Some basic models require a wait time between seals, that can extend up to twenty seconds or so.  In a commercial setting, this equals time wasted, and time is money.

    The wait time is necessary, though, as it allows for the seal bar to cool, and also prevents the motor from overheating.  If the motor does overheat for some reason, you then must sit and wait for the motor to cool before you can use your sealer again.  Commercial style vacuum sealers have motors that do not require this ‘wait time’, and they also have motors that do not overheat as easily.

 

Bags and Accessories for Vacuum Sealers

download (1)There are lots of bags and accessories  offered for different models of vacuum sealers.  Bags (or pouches as they are called for chamber sealers) usually come in standard sized of gallon, pint, or quart.  Some brands offer other sizes, normally ranging from eleven to fifteen inches in width.

When choosing bags or pouches for your food sealer, please keep in mind the length of your seal bar as you can not seal bags that are longer than your seal bar.  Most people are happy with the basic sizes, but some find certain dimensions better suited for different foods.

The good news is that a lot of food sealers come with a few different sized bags or pouches for you to try, so you can experiment with different sizes and not have to worry about purchasing some that you may not find that useful.

Some models offer rolls, which give you the option to create your own bags. Rolls average eight to eleven inches in width, with a few, found up to fifteen inches.  Rolls can range from eight to fifty feet of bag material on average.

When using rolls to create a custom sized bag, you simply roll out how much material you want and cut.  Some models have an included bag cutter, but some you will have to break out the scissors for this step.  You then insert one end of the material into the sealing area to create a seal.  Once you have one end sealed, you can begin stuffing the other end, then vacuum and seal in your food just as you would with a regular bag.

For vacuum sealers that use accessories, there are many to choose from.  Jar sealers normally come in two sizes, one for regular jars, and one for wide mouth.  With your jar sealer, you can vacuum seal foods in the classic mason jar. You can also use the accessory port to seal zipper bags.  With zipper bags that seal, you can open and reseal repeatedly without having to cut off a seal and lose out on precious bag material (and space).

Some brands offer different sizes of rigid plastic containers and canisters that you can place foods in for sealing.

Some common sizes are also pint, quart, and gallon.  Some of these are suitable for the marinate function found on some food sealers, while some brands offer a specially designed marinator accessory.  Some brands and models are also compatible with bottle stoppers.  Bottle stoppers are designed to vacuum seal opened bottles.  This can keep your wine fresher longer, and keep that nasty ‘corked’ flavor of bitterness at bay.

Before buying any vacuum sealer, take a minute to see what sized bags are compatible, and also what accessories you may want to use versus which ones can be used with each model.  For example, if you are going to be sealing very large items that require a fifteen-inch wide bag just to fit, you will have to make sure the model you are considering can accommodate and seal a fifteen-inch wide bag.

Also, you will be very upset to specifically pick a mode that can use accessories to find out that it is not compatible with the one accessory you want to use most.

The main purpose of sous vide cooking is o cook meats and vegetables in a manner that helps them to reach the perfect temperature you desire, all without having to guess what setting to put your oven on, or when to pull the food and let the residual heat finish cooking.

Sous vide essentially eliminates the risk of both over and under cooking, providing you with food that is perfectly tender, flavorful, and that retains the maximum amount of nutrients.

On top of that, because of the guaranteed temperature, it is extremely safe if done properly.  you can even implement sous vide techniques to pasteurize foods in the comfort of your own home.

 

So How Does Sous Vide Work?

sous vide cookingWell, you start with the vacuum.  Use your vacuum sealer to seal in the food that you would like to be cooked.  You can get creative here, adding spices and herbs for flavor.

Though you can use marinade if desired, you will find that it is not necessary because cooking the sous vide way retains a natural high amount of moisture in the food.

We would recommend that you begin your sous vide experimentation with the basics, say salt and pepper, to really taste the food you are cooking, and how much better it tastes when cooked sous vide.

If you want to get really experimental, try a nice stew recipe by sealing in the ingredients with a chamber sealer.

Now that you have your food vacuum sealed, you then immerse it in a water bath.  This is the main reason you really want to vacuum seal your food.  We have heard of people using regular zipper bags before, whether Ziploc brand or some other, but we would not recommend it.

If not using a vacuum sealed bag, you are running the risk of water inadvertently getting into the bag.

Not only will this ruin your food and require you to begin again, but it also compromises the water and the overall safety of the procedure.  So please believe us when we say, it is worth it to go through the process of vacuum sealing.

An added bonus to this is that you can cook sous vide at the beginning of the week, then store perfectly succulent meals to eat throughout the week safely, with air sealed out.

The water bath is set to the temperature that you wish for your food to reach when cooking.  For example, for a good medium rare steak should be cooked to an internal temperature of about 130 degrees.

Traditionally, you would throw this steak on heat that far exceeds the 130-degree mark, then almost guess when to pull it to achieve the temperature you want.  If you pull it to early, it will be undercooked, and too late and and the residual heat can cause you to no longer have a medium rare steak, but something much drier and tougher than you wished.

With sous vide cooking, the steak is immersed in water at the temperature you wish.  Because the steak literally CANNOT get any hotter than the water that it is in (because, science), it will never exceed the temperature that you wish it to be.  Ta- da!  Perfectly cooked steak, just as it tastes in a restaurant.  (Actually better if you ask us, because of the sense of pride felt when biting into a juicy, tender steak you created yourself.)

imagesBut what about undercooking, you ask?  Is it safe to cook steak at such a low temperature?  Why, absolutely!  If cooked at the right temperature and time (normally about 1-4 hours), your steak is as safe as it can possibly be.

The final step to a perfect steak is to sear the outside.  Everyone loves a nice crisp finish.  to achieve this, simply sear in a pan, or even get a little crazy with it and hit it up with a blowtorch!  (Professional chefs do this all the time.)

This is great for thos of us out there that are impatient to try something cooked sous vide!  (Before cooking anything sous vide, please be safe and read all recommendations for your cut of meat or fish.)

With fish, you follow a lot of the same process as the steak, by vacuum sealing and dropping it into the water bath.  when the fish has completed its water bath cycle, you can choose to sear it as well for a crisp finish, or eat it as is depending on your preference.  Because fish and steak can be cooked at a similar temperature, you could even drop in both for some surf and turf.
